Pouteria lúcuma

Lucuma fruit that grows in trees that can reach 15 meters height and lives in subtropical areas of South America, especially in Peru, Chile and Ecuador.

It has green, smooth skin that covers the bright yellowish-orange flesh that keeps inside. The flesh contains a lot of fiber and proteins, making it ideal for people who don’t eat meat. It is also rich in vitamin A, B2 and C. Lucuma is used locally in deserts, ice cream preparations and desserts. However, the use of this fruit (sacred for prehispanic civilizations and present in ancient traditional legends) is still being discovered, making it a curious and always exotic component to work with in high cuisine.
